Ingredients

For the Chicken:

  • 2 lbs (about 1 kg) chicken pieces (mix of drumsticks, thighs, and wings)
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

For frying:

  • Vegetable oil, for frying

For the Coating:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper

1. Marinating the Chicken:

  • In a large bowl, combine buttermilk, salt, black pepper, paprika, garlic powder, and onion powder.
  • Add the chicken pieces to the bowl, ensuring they’re fully coated in the marinade.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best results

2. Preparing the Coating:

  • In a separate bowl, combine flour, salt, paprika, garlic powder, onion powder, dried thyme, dried oregano, and black pepper.
  • Mix the coating ingredients thoroughly.

3. Coating the Chicken:

  • Remove the marinated chicken from the fridge and let it come to room temperature.
  • Preheat your frying oil in a deep fryer or a large, heavy-bottomed pot to 350°F (175°C).
  • Take each piece of chicken from the marinade and allow excess liquid to drip off.
  • Dredge the chicken in the seasoned flour mixture, making sure it’s coated evenly. Press the flour onto the chicken to create a good coating.

4. Frying the Chicken:

  • Carefully place the coated chicken pieces into the preheated oil, a few at a time, making sure not to overcrowd the pot.
  • Fry the chicken for about 12-15 minutes, depending on the size of the pieces, until they are golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
  • Once cooked, use a slotted spoon to remove the chicken from the oil and place them on a wire rack or paper towels to drain any excess oil.

5. Saucing the Chicken:

  • In a large mixing bowl, toss the fried chicken pieces with Tip32 Sauce. Coat the chicken evenly with the sauce.

6. Serving:

  • Transfer the sauced crispy fried chicken to a serving platter.
