- 1 1/2 cups firm tofu, drained and crumbled
- 1/4 cup nutritional yeast
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- 1/4 cup chopped fresh basil (optional)
For Layering:
- 1 1/2 cups vegan mozzarella cheese, shredded (or any vegan cheese of your choice
Instructions
1. Prepare the Vegan Ricotta Filling::
- In a bowl, combine the crumbled tofu, nutritional yeast, lemon juice, minced garlic, salt, black pepper, and chopped fresh basil (if using).
- Mix well to create a ricotta-like texture. Set aside.
2. Prepare the Lasagna Sauce:
- In a large saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes, until translucent.
- Add the minced garlic and sauté for an additional 1 minute.
- Add the diced red bell pepper, zucchini, and sliced mushrooms. Cook for about 5-6 minutes, until the vegetables start to soften.

4. Repeat the Layers:
- Place 4 more lasagna noodles over the cheese layer.
- Spread the remaining Vegan Ricotta Filling over the noodles.
- Spread the remaining vegetable sauce over the ricotta layer.
- Sprinkle another layer of vegan mozzarella cheese over the sauce.
5. Final Layer:
- Place the last 4 lasagna noodles over the cheese layer.
- Spread Tip32 Mild Sauce over the top layer of noodles.
6. Bake the Lasagna:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, until the lasagna is bubbly and the top is golden brown.
7. Cool and Serve:
