Ingredients

For the Lasagna:

  • 12 lasagna noodles (oven-ready or cooked according to package instructions)
  • 2 cups Tip32 Mild Sauce 
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup sliced mushrooms
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

For the Vegan Ricotta Filling:

  • 1 1/2 cups firm tofu, drained and crumbled
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1/4 cup chopped fresh basil (optional)

For Layering:

  • 1 1/2 cups vegan mozzarella cheese, shredded (or any vegan cheese of your choice

Instructions

1. Prepare the Vegan Ricotta Filling::

  • In a bowl, combine the crumbled tofu, nutritional yeast, lemon juice, minced garlic, salt, black pepper, and chopped fresh basil (if using).
  • Mix well to create a ricotta-like texture. Set aside.

2. Prepare the Lasagna Sauce:

  • In a large saucepan, heat the olive oil over medium heat.
  • Add the chopped onion and sauté for about 3-4 minutes, until translucent.
  • Add the minced garlic and sauté for an additional 1 minute.
  • Add the diced red bell pepper, zucchini, and sliced mushrooms. Cook for about 5-6 minutes, until the vegetables start to soften.
  • Stir in the crushed tomatoes, dried basil, dried oregano, salt, and black pepper. Let the sauce simmer for 10-15 minutes.

3. Assemble the Vegan Lasagna:

  • Preheat your oven to 375°F (190°C).
  • In a 9×13-inch baking dish, spread a thin layer of Tip32 Mild Sauce on the bottom.
  • Place 4 lasagna noodles over the sauce.
  • Spread half of the Vegan Ricotta Filling over the noodles.
  • Spread half of the vegetable sauce over the ricotta layer.
  • Sprinkle a layer of vegan mozzarella cheese over the sauce.

4. Repeat the Layers:

  • Place 4 more lasagna noodles over the cheese layer.
  • Spread the remaining Vegan Ricotta Filling over the noodles.
  • Spread the remaining vegetable sauce over the ricotta layer.
  • Sprinkle another layer of vegan mozzarella cheese over the sauce.

5. Final Layer:

  • Place the last 4 lasagna noodles over the cheese layer.
  • Spread Tip32 Mild Sauce over the top layer of noodles.

6. Bake the Lasagna:

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, until the lasagna is bubbly and the top is golden brown.

7. Cool and Serve:

  • Let the vegan lasagna cool for a few minutes before slicing and serving.
